RECOMMENDED GEAR

  • Medium to coarse grind coffee.

  • Timer/ stopwatch/ Phone.

  • Water (filtered preferred).

  • Hario V60 Paper Filter 02

  • Varia Smart Control Temperature Kettle

  • Rhino Bench Scale 2KG

  • Hario V60 Dripper 02

  • Hario V60 Server 600 Clear 02

  • ACAIA Pearl Scale

PREP, POUR, ENJOY

1. Grind the coffee: medium to coarse grind for drip. Or purchase Schibello Ground Coffee.
2. Measure the coffee and water: ratio is 1:15 (e.g., 20g coffee for 300g water).
3. Brew the coffee: place grounds in a filter.
4. Place the whole pour over unit including the ground coffee onto the scales and tare. The scale should say 0g.
5. Start the timer at the same time you start pouring.
6. Firstly, pour about 10-20% (30-60g) of the total (300g) of hot water slowly to cover the ground coffee and wait 30 sec. This will help the initial gas (CO2) inside the bean to escape and create a more consistent brew. This is commonly known as the Bloom* stage.
7. Pour around 80-100g of water onto the coffee in a circular motion then wait until it has mostly exited into the carafe. Repeat this process until the scale says 300g total weight.
8. Serve and store: drink immediately or keep warm in a thermal carafe.

*The bloom is the initial stage of brewing pour over coffee, when hot water is poured over freshly ground coffee. This process helps release carbon dioxide (CO2) from the coffee, causing the grounds to bubble and expand.

BREWER’S TIPS

• Pre-wet the filter to remove any paper taste.
• Pour in stages for even extraction. Pouring too much water in one go can make the coffee taste watery.
• When pouring water into the coffee try not to let the water hit the side/ paper as it goes straight to the bottom and not extract as much coffee. This will make the coffee taste watery.

IT’S ALL ABOUT THE VIBE

Filter coffee offers a clean, bright cup with nuanced flavours that come through clearly. It’s a great method for highlighting the subtle notes of specialty beans, offering an experience that feels refined and satisfying. The taste tends to be smooth, with a delicate body and a range of flavours depending on the roast and coffee origin.
